Cow's Milk
The last of the major milking animals to be domesticated, cows offer a large quantity of milk that is high is nutrients. Just a few examples of cheese made with cow's milk include Gruyere, Parmigiano Reggiano, the buttery, rich Brillat Savarin, and the King of Blues, Stilton.
Goat's Milk
Goat's milk cheeses generally have a fresh, bright flavor due to the high acidity of the milk. Goat's milk can be transformed into any style of cheese but are generally younger and softer in texture. Some examples include Chabichou du Poitou, Garroxta, and Purple Haze.
Sheep's Milk
Sheep give tiny amounts of milk but its high quality makes up for the low quantity. Rich in protein and fat, sheep's milk is used to make to make Manchego, Petit Agour, and all the pecorinos, including Pecorino Grand Old Man.
Mixed Milk
Some cheesemakers have combined milks of different animals out of necessity, while others use these combinations to create new and exciting cheeses. Rochetta is an example of traditional mixing and Nancy's Camembert is a modern example of an old favorite made with sheep and cow's milk.
Please note that most cheese is sold by the HALF POUND. If you would like to order more, simply change the quantity. For example, if you want a pound of cheese, write 2 for the quantity.
